Today I was craving something sweet and decided to make something simple with the ingredients I have. I used this recipe from how to eat and live and modified it to my own.
Here is the recipe and a pretty picture of the outcome 🙂
1 1/4 c. almond flour
1/4 teaspoon sea salt
1/4 teaspoon baking soda
1/4 c. raw honey
1 egg white
2 tablespoons coconut oil
couple of hand fulls of dark chocolate chips (or more if you like 🙂
Preheat the oven to 300 to 325 depending on your oven, you want the cookies to cook slow enough to cook through thoroughly.
Mix the dry ingredients (flour, salt, and baking soda) in one bowl. Next add the wet ingredients (honey, egg white, coconut oil) in another bowl. Then mix all the ingredients together. Last, fold in the chocolate chips.
Yields about 6 decent size cookies. You can make more if you want smaller cookies then the one I show in the picture… bake for about 10 to 15 mins.. until the top and edges are golden. Let cook and enjoy!
